Ingredients
4 each 5-6oz Chicken Breast
1 12oz bottle Salter's Fresh Raspberry & Passion Fruit Dressing
8oz bag Spinach, picked and destemmed
8oz Goat Cheese
2 each Pears
4oz Toasted Pine Nuts
Method of Preparation
1. Trim the chicken breast and marinade in 6oz of the Raspberry & Passion Fruit Dressing for 1 hour.
2. Remove from the marinade and season with salt and ground black pepper. Grill on both sides brushing with the dressing for approximately 10 minutes.
3. Mix the spinach leaves with the raspberry & passion fruit dressing then sprinkle on the toasted pine nuts, the goat cheese and the peeled chopped pears. Toss together.
4. Drizzle with the Raspberry & Passion Fruit Dressing and serve.
